Catfish and hushpuppies are great deep-fried, below are my keep-it-simple recipes for both.

Phil’s Fried Catfish:

    1 cup of self-rising corn meal (white or yellow your preference)
    1 teaspoon of salt
    1 teaspoon of black pepper
    This mixture will be enough for 15 to 20 finger width strips of fillets. Double ingredients  for more fillets.

  1. Start fire on fish cooker and place oil (peanut or vegetable) a thermometer in the pot. Place this mixture in a gallon zip lock bag and shake up to mix.
  2. Take one fillet and cut in cross sections finger width. Place under tap water and wet, let the water drain off.
  3. Place fillets in the zip lock bag with the dry batter and shake. If water has drained properly there should be a thin coat of meal on the strips of fish.
  4. Check thermometer  temperature, you want grease to reach 300 degrees before dropping the fillets in.
  5. Once grease starts to cool down don’t let the temp drop below 250 degrees. Fish will be greasy if temp stays below 250 degrees. Turn temp up on cooker or stove eye if you drop below 250.
  6. If temperature is correct, fish should take 10 – 12 minutes to cook.
  7. Remove fish when the tempter gets back to 300 degrees on the thermometer.
  8. Repeat steps 1-7 till all fish are cooked.  Place fish on a plate covered paper towel to remove excess oil. Place  the oven at the lowest setting to keep warm while cooking French fries and keep from drying fish out.

Phil’s keep-it-simple Hushpuppy Mixture.
This will make enough for 6 to 8 adults.

    1 cup self rising meal
    1 cup of self rising flour
    2 teaspoons of salt
    2 teaspoons of pepper
    2 teaspoons of sugar

  1. Place dry mixture in a bowl and place lid on the container and shake till dry ingredients are mixed well.
  2. Add 1 cup milk or buttermilk (your preference)
  3. Add one 1 egg and mix well
  4. Add one cup of onions (more if you like onion)
  5. If mixture is too thick add small amounts of milk till mixture is easy to stir, not runny. Let sit for 30 minutes and mixture will rise and thicken.
  6. Keep temperature at 300 degrees and take a teaspoon, dip into the mixture and  drop pecan size hushpuppies in the hot oil mixture (Tip: Fill a glass with tap water and dip teaspoon in the water after 3 to 4 hushpuppies, this allows them to slide off spoon. better.)
  7. Hold mixture close to the oil to keep from splashing hot oil on you.
  8. Roll them over with a spatula once the side facing the oil turns light brown. Remove after both sides turn light brown.

Other ingredients you can add if you would like:

  • Jalapeno peppers to kick it up a notch
  • Chopped bell peppers for onion substitute
  • Drained can of whole kernel corn to add a little color
